Black Earth Poached Egg

This is a tasty, nutritious, make in a minute meal with whatever you have in the fridge.

Ingredients:

1 slice of thick toast or rustic bread

1 free range egg

Black Earth Kasundi or Kasundi with Kick

Baby spinach leaves (optional)

Caramelised onions (optional)

A rasher of bacon or slice of salmon (optional)

Crumbled feta (optional)

Chopped parsley or coriander to garnish

Freshly ground pepper

 

Method:

Bring a pan of water to the simmer with a splash of vinegar. Break egg into water to poach to your liking. Toast bread and spread generously with the kasundi. Layer the optional extras on the toast, place the poached egg on top and dress with parsley or coriander, a little extra kasundi and pepper.
